Tasting Notes:
The Winemakers pressed (no skin contact for the Pinot Noir) and the resultant juices blended. Fermentation was allowed to start spontaneously, and the wine bottled once the residual sugar had reduced to approximately 16 g/l to allow for some further fermentation in bottle.
